Although it’s tempting, don’t overfill the pastry shells with Lemon Curd otherwise it will bubble over during cooking. These cupcakes are great served with cream and a good dollop of Lemon Curd on the side!

Recipe created by Lyn Potter, Shoot and Eat The coulis has an intense berry flavour and can be made in seconds in the microwave. Simply pour a little of the hot syrup over a scoop of vanilla ice cream. This coulis could also taste wonderful over meringues filled with whipped cream.
